In a previous life The Curlew Restaurant at Bodiam,
East Sussex was a Coaching Inn where travelers rested their weary, mustachioed heads and warmed their spirits while on rain-sodden route from Hastings to London. 

But now The Curlew has been given another life.

Just an errant arrow flight from Hastings, stone skim from Bodiam Castle, mince from Brighton, manicured lawn from Tunbridge Wells, The Curlew is a place where formal food meets informal dining, where the city and country brush shoulders, style meets stile.

The Curlew was voted Sussex’s Best Dining Experience in 2012, 2015 and was a finalist in 2016.

The Curlew is a modern British bistro built on four cornerstones: quality, locality, responsibility and seasonality.

We’re committed to sourcing the very best quality meat and poultry, fish and seafood, vegetables and fruit we can find. We begin that search in our local community.

We fervently believe in the hugely talented, committed producers in Kent and Sussex turning out quality Romney lamb and Sussex beef, Kent cherry batter, Biddenden cider jelly and the like.

We believe local businesses and communities have a responsibility to support each other - global thinking, local eating.

We maintain relationships with our local suppliers to ensure those fantastic products and ingredients are delivered at their very peak, and that The Curlew’s menu remains embedded in the passing colours of the British seasons.

Ultimately, it’s all about the food.

France, Spain and Italy, New Zealand and South Africa; admittedly, for our wine list we had to travel a little
further afield.

Where possible, we have opted for independent, biodynamic and organic wine producers. Many of them committed to ‘terroir’, a wine philosophy bordering on the mystical, which balances the soil, climate, location, density, training, pruning and the cultural and social influences upon the final product.

Ultimately, it’s all about the wine.

That’s not to say we’ve ignored beers and lagers. After
a number of extensive tasting sessions, we opted for (amongst others) bitter from Hepworth & Co, winners of the West Sussex County Times Best Local Producer Award (2009), St Peter's Organic Beer from Suffolk and Kasteel Cru lager, the only lager which is made using Champagne yeast and brewed in Alsace.

Ultimately, it’s all about the beer.

Throughout our list we have chosen independent, biodynamic and organic wine producers.

Many of them committed to ‘terroir’, a wine philosophy bordering on the mystical, which balances the soil, climate, location, density, training, pruning and the cultural and social influences upon the final product.

ORGANIC, BIODYNAMIC AND NATURAL WINES

We are big fans of this relatively new movement within the wine industry, and make a feature out of these sometimes odd, occasionally hard to understand but frequently delicious vinous drops.

In this day and age everyone understands what is meant by organic, but biodynamic viticulture takes things a few steps further.

Vineyard practices are governed by lunar cycles, the grower believes the vineyard has a soul that needs nourishing.

The winemaker eschews the use of laboratory prepared yeasts in favour of ones that occur naturally in the vineyard, the wines often have no fining or filtration and an absolute minimal use (if any) of sulphur at any stage of the wine making process.

The term ‘natural wine’ has no true definable measure but the order of the day is absolute minimal intervention.

The organically or bio-dynamically grown grapes travel from the vineyard to the winery, are crushed, gently put in a vat, fermentation takes place naturally, the wine settles and is then bottled.

This is a return to how wines historically used to be made. We believe that the resulting products offer the purest expression of the grape variety, soil type and climatic conditions of the vintage.
